New Year’s Eve Appetizer: Chicken-Chipotle Dip

If you’re looking for a super easy appetizer for New Year’s Eve, Super Bowl Party or just any occasion, I have one for you. This Chipotle Chicken Dip is one of my newest favorite lightened up appetizer recipes. Take a shortcut by using a rotisserie chicken and add light cream cheese, nonfat Greek yogurt, green chilies, chipotle seasoning. Serve it with your favorite whole grain crackers, pita chips or fresh vegetables, and you’ll have a crowd favorite.

Lightened Up Chicken-Chile Chipotle Dip

Prep: 25 minutes
Cook: 45 minutes
Yield: 12 to 16 servings
Ingredients
1 rotisserie chicken, chopped
1 (8-ounce) package light cream cheese, softened
1 (6-ounce) container nonfat Greek yogurt
1/2 cup reduced-fat mayonnaise
2 cups shredded Colby cheese, divided
1 (4.5-ounce) can diced green chiles
1/4 teaspoon paprika
1/4 to 1/2 teaspoon ground chipotle seasoning
1 Whole Grain crackers, pita chips
Preparation
1. Preheat oven to 350F.

2. Combine chicken, cream cheese, yogurt, mayonnaise, 1 cup of cheese and chiles in a large bowl, mixing well. Spread in a lightly greased 11- x 7-inch baking dish or 2 (1-quart) greased casserole dishes. Top with remaining cheese; sprinkle with paprika and chipotle seasoning. Bake in preheat oven 40 to 45 minutes or until golden brown. Serve with whole grain crackers, pita chips or fresh vegetables.
