Watermelon Sorbet Recipe

Happy Father’s Day to all your dads out there! My daughter, Leigh, wanted to make something special for Father’s Day for her dad and mine, so she suggested a Watermelon Sorbet recipe perfect for this time of year. She went searching for a way to make sorbet without an ice cream maker (since we don’t have one). She adapted this recipe from Taste of Home, and this 4 ingredient recipe came out fabulous! ¬†All of you dads (moms and kids too) are going to love it! This makes a great dessert recipe to serve for Fourth of July, Labor Day and all summer long. Enjoy and cheers to a great week ahead!

Watermelon Sorbet

Prep: 40 minutes plus freezing time
Yield: 6 to 8 servings
Ingredients
1 cup granulated sugar
1 cup water
8 cups cut-up watermelon
2 tablespoons fresh lime juice
Preparation
1. In a small saucepan, bring sugar and water to a boil. Cook and stir until sugar is dissolved; set aside.

2. In a blender or food processor or blender, process the watermelon in batches until pureed. Transfer to a large bowl; stir in the sugar syrup and lime juice.

3. Pour into a 13-in. x 9-in. dish; cover and freeze for 8 hours or until firm. Just before serving, puree watermelon mixture in batches until smooth.
