Happy Father’s Day to all your dads out there! My daughter, Leigh, wanted to make something special for Father’s Day for her dad and mine, so she suggested a Watermelon Sorbet recipe perfect for this time of year. She went searching for a way to make sorbet without an ice cream maker (since we don’t have one). She adapted this recipe from Taste of Home, and this 4 ingredient recipe came out fabulous! All of you dads (moms and kids too) are going to love it! This makes a great dessert recipe to serve for Fourth of July, Labor Day and all summer long. Enjoy and cheers to a great week ahead!
1 cup water
8 cups cut-up watermelon
2 tablespoons fresh lime juice
2. In a blender or food processor or blender, process the watermelon in batches until pureed. Transfer to a large bowl; stir in the sugar syrup and lime juice.
3. Pour into a 13-in. x 9-in. dish; cover and freeze for 8 hours or until firm. Just before serving, puree watermelon mixture in batches until smooth.
