<h3>Valentines is almost here, and I thought I would share my latest healthy idea of what you can snack on at home, in the office or at your kids&#8217; class parties. This Valentine Trail Mix is filled with healthy nuts, yogurt covered pretzels and raisins. Feel free to add your favorite nuts and dried fruits. Top it off with a small amount of regular or peanut <a href="http://www.theurbanbaker.com/chocolate-caramel-tarts-croissants-and-a-new-way-to-eat/">M &amp; M&#8217;s</a>, and you&#8217;ll have a winning Valentine&#8217;s Day treat that is fairly healthy too.</h3>

Chia seeds have more calcium and fiber than flaxseed, and they are loaded with omega-3 fatty acids, vitamins and minerals. They are also said to boost energy levels. They have a nutlike flavor, and they add flavor and crunch to baked goods, oatmeal, cereal, salads and in yogurt. Try them in this recipe for Chia Banana-Nut Muffins. It&#8217;s so easy, with no mixer needed. I made these on sunday, and before I could turn around, all of them were gone. My kids went wild over these. Feel free to use mini muffin pans for variety. If you use mini pans, bake them at 350F for 13 to 15 minutes or until lightly browned. Enjoy, and check out this powerful seed.</h3>

<h3>I have been on a soup kick this month, and I am so excited to judge this year&#8217;s <a href="http://acousticsoup2012.eventbrite.com/">Acoustic Soup</a> in Birmingham, Alabama at <a href="http://www.workplay.com/">Workplay</a> on January 26th. This event will feature soup from talented Birmingham chef&#8217;s and restaurants benefitting <a href="http://vsaalabama.org/">VSA Alabama</a>, which serves children and adults with chronic disabilities through the arts. Please come and bring your families for great food and a wonderful cause. <h3>It&#8217;s a busy week ahead for me including with radio show on <a href="http://www.magic96.com/main.html">Magic 96.5</a> this Wednesday as well as a nutrition seminar this weekend at <a href="http://bikrambirmingham.com/">Bikram Yoga Birmingham.</a> For both events I&#8217;ll be talking about &#8220;Healthy Eating Tips&#8221; to get your new year off to the right start. One of my top tips is to never skip breakfast. If you like oatmeal for breakfast, you&#8217;ll love this recipe for Oatmeal with Egg Whites. This simple combination is something my friend, Kelly, of <a href="http://hulseygardens.com/">Hulsey Gardens</a>, told me she eats daily. I made mine with a touch of brown sugar and blueberries. Kelly normally adds 1 tablespoon of pureed pumpkin, 1 teaspoon of pumpkin pie spice and 1 teaspoon vanilla to hers. Adding sliced strawberries and ground cinnamon is also delicious. Regardless, this is one healthy breakfast recipe that has the perfect mix of protein, fiber and carbohydrates, and it is a great way to start your day and new year on the right foot.</h3>

<h3>I know I am like many of you who can&#8217;t believe the year has gone by so fast. It has been a good one for me with the release of my first international cookbook, <a href="http://www.ingredientsinc.net/400-best-sandwich-recipes/">&#8220;400 Best Sandwiches&#8221;</a>, awesome speaking engagements, great trips (including my first trip to Italy) and so much more. The past few months have been rough for me with the decline of both of my parents&#8217; health. <h3>I first made this recipe for Peppermint Milkshakes on my blog in December of 2008 when I literally threw three ingredients together in a blender for my kids instead of taking them to get peppermint ice cream. Since then, I have been making these religiously for parties and for my 3 kids. It has been one of the most heavenly requested recipes from my children&#8217;s friends who have come to my house and tried them. Whenever I&#8217;m invited to a holiday party, I typically get asked to make these. This past sunday night, I made them for 28 people, and it was beyond an absolute hit. So, I thought, &#8220;Why not change a recipe around a bit to create another tasty treat for them.&#8221; Instead of using ramekins, I tried some fun stoneware mugs. These Molten Cakes in a Mug came out absolutely wonderful. They make a simple, inexpensive holiday gift. Just purchase a stoneware or ovenproof mug, and tie a recipe card with this recipe to go along with it. It may just be what my neighbors are getting <img src='http://www.ingredientsinc.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . I hope they aren&#8217;t reading this&#8230;</h3>
