No Bake Peanut Butter Cups

I am a huge peanut butter fan so I have had my eye on making these No Bake Peanut Butter Cups for quite some time. I saw this recipe on Fifteen Spatulas blog a while back, and my daughter, Leigh and I finally had some time to whip them up. These are simple to prepare and a great no bake dessert recipe. They are also gluten-free!  We made ours into tiny bites, and one is plenty to satisfy your peanut butter and chocolate craving. Enjoy!

No Bake Peanut Butter Cups

Prep: 20 minutes
Yield: 16 cups
Ingredients
16 ounces semisweet chocolate chips
1/2 cup creamy natural peanut butter
2 tablespoons butter, softened
1/4 cup plus 2 tablespoons confectioner sugar, sifted
Preparation
1. Line a standard 12-cup muffin tin with paper cupcake liners.

2. Melt half the chocolate either in a double boiler or in the microwave. Place the melted chocolate into the 12 muffin tins using a cookie scoop to portion the chocolate, only barely filling the bottom of each cup. Smooth out with a spoon. Place the pan in the freezer for 15 minutes.

3. Meanwhile, combine the peanut butter, butter, and confectioner sugar until smooth. Place small tablespoons of peanut butter into each cup, and smooth out with a spoon so the peanut butter layer is flattened out. Place in the freezer for 15 minutes.

4. Melt the remaining chocolate, and portion small spoonfuls of chocolate into the cups, one cup at a time, smoothing out with a spoon to flatten each cup. Place the peanut butter cups in the freezer for 15 minutes to set the top layer of chocolate. Remove and enjoy at room temperature. Store in an airtight container in the refrigerator for up to one week.
