No Bake recipes bar cookie recipes are some of my favorite cookie/bar types of desserts, especially this time of year when I’m so busy. I quickly mixed up these up one afternoon, and my kids told me these were a “home run” (well that was what the boys said). My daughter loved them even though she isn’t a coconut fan. These No Bake Chocolate Peanut Bars call for ingredients that you probably already have in your pantry. These make a great afternoon snack, dessert (with milk) and an easy homemade gift for Christmas or Hanukkah.

I love twitter for so many reasons. To start, I have made so many fabulous friends. I truly make new friends daily, but I always come across the latest and great information on news, health, fitness, recipes, social media and more. I was so excited when Regan Jones from The Professional Palate posted a recipe for Blueberry Cobbler Bars inspired by her grandfather. I know Regan from her days at Cooking Light and Weight Watchers magazines when I was working at Southern Living. When I saw her tweet about her recipe, I told her I must try it with peaches. Well, it worked beautifully. These Peach Cobbler Bars are not only so easy, but out of this world.

I am always searching for a great-tasting and nutrient-rich protein bar that is not too high in fat and calories. This is just in case I am in too much of a hurry to eat and need something on the run. One of my favorites is the “Grab The Gold Snack Bars”. Made with peanut butter, oats, chocolate, whole grains and crunchy soy nuggets, they taste fresh and are high in fiber, protein and potassium. With 195 calories, 11 grams of protein and 5 grams of fat, I think they’re hard to beat. And if you’re counting your Weight Watcher’s points, they only have 4 points. There’s only one catch: they can be tricky to find, but you can check their website to see where they carry them in your area or purchase them online at http://www.grabthegold.net. My friend, and dietician consultant Sandra Koulourides, of Fuel Plus Fitness recommends these to all of her clients. Trust me, she knows what she’s talking about. Look for our joint cookbook coming in the near future.

One of my very favorite things in the world is granola. Most of the time, I have to battle myself not to buy it, because once I start eating it, I can’t stop. I also have prepared many granola recipes, but again, I have to limit myself. So, when I was asked to come up with some healthy breakfast recipes for a national food magazine, one of my recipe concepts was a granola, Breakfast Bar. I really wasn’t sure if I could get the recipe to work, but on the second try, it was a home-run. I was so excited, and I couldn’t wait to share them with friends. I went straight from recipe testing to a tennis lesson with my tennis pro, Bob (who isn’t a health nut), and he said, “Wow” and “delicious”, and I feel healthy already”. I know you will agree. These are a more than a wow!
