Sorry I have been so out of touch. I have been preparing for the “Kids Healthy Baking” Cooking class at Studio B in Alys Beach, Florida all last week. The class was yesterday, and we had 24 kids-huge success! Back to the grind now, but not yet. Since I had the best margarita ever today with wonderful company at Caliza Pool in Alys Beach, I thought I would share a recipe for easy Empanadas that are low-fat (85 calories and 1.5 grams of fat per serving), easy and delicious! Here’s to incredible surroundings!

“Healthy Baking For Kid’s” Cooking Class in Alys Beach, Florida at Studio B

I have been teaching a lot of children’s cooking classes lately, and I’m so fortunate to teach over spring break in Alys Beach, Florida at Studio B. Studio B is one of the most beautiful places in the country in Alys Beach. Founded by world renowned photographer, Colleen Duffley, Studio B is a creative venue that brings together the best of the best in the fields of photography, art, design, literature, food, and wine. It’s creativity in an incredible relaxed atomosphere, “A playground for the imagination,” Colleen says. If your children are interested in baking, this will be a special treat for them. In “Healthy Baking for Kid’s and the Secret Ingredient,” we will be baking delicious baked treats with a healthy edge (all made with a secret ingredient such as Greek Yogurt, egg whites, and more). Summer Favorite: Grilled Tuna Salad with Avocado and Grapefruit

I had a wonderful, light, crispy salad last week while in Alys Beach Florida so I decided to try to replicate the recipe at my own house. Grilling fresh tuna is so easy, and the lemon marinade makes it so fresh and juicy. Serve the tuna on mixed greens with your favorite toppings. This version includes avocado, pink grapefruit, tomatoes and carrots. If you don’t have time to make your own dressing, use your favorite jarred version. Grilled Tuna Salad with Avocado and Grapefruit is a great way to taste summertime and the good things in life.

Studio B and Kid’s Culinary Camp This Summer in Alys Beach, Florida

Things have been so busy lately, and I am so excited about this summer! My kids are out of school, and they are so happy about that. Plus, I get the wonderful opportunity to teach kid’s culinary camps in the incredible location at Alys Beach Florida at Studio B. Colleen Duffley, a photographer of 25 years, had a “plan B” to create a studio that brings the best creative talent in food, photography, fashion, art, design, beauty, music and literature. There will be seminars, classes and inspirational lectures by some of the world’s most creative people. Just a few of the foodies are Sarah Foster, Emeril Lagassee, Michael Chiarello and Scott Peacock. Check out the site’s “B List” for more information on who’s coming to Studio B.
