<h3>Quinoa is one of my favorite Super Foods of 2012. I talked a great deal about quinoa this weekend at my nutrition/healthy eating seminar including how to pronounce it, purchase it and cook it. I had a lot of wonderful questions regarding this gluten-free grain. One serving of quinoa provides all 8 essential amino acids, and it is high in protein and fiber. It&#8217;s also a wonderful grain for those on a gluten-free diet, and it works wonderful for breakfast, a side, in soups and salads. I recommend buying the rinsed version to make your life even easier. I developed this recipe for Quinoa Salad with Almonds, Cranberries and Mint for Thanksgiving for <a href="http://www.honeysucklewhite.com/alisonlewis/">Honeysuckle White</a> and<a href="http://www.shadybrookfarms.com/alisonlewis/"> Shady Brook Farms</a> Turkey. It makes a great side dish or salad, and my kids absolutely loved it. Add grilled chicken or shrimp if you wish for a main dish salad.</h3>

<h3>So, it&#8217;s Brussels Sprouts season, and I know people either love them or hate them. I happen to be a fan, and 2 out of 3 of my kids are too. This recipe for Brussels Sprouts Salad with Cranberries and Walnuts is one of my new favorites which I&#8217;ll serve on Thanksgiving this year. I used a simple apple cider vinaigrette mixture to flavor the Brussels Sprouts and tossed them with sweet dried cranberries and crunchy walnuts. It’s loaded with protein, fiber and, best of all, is gluten-free. It is light, tasty and easy to digest, with a slightly nutty flavor. This recipe for Breakfast Almond and Raspberry Quinoa is fabulous. I had all 3 of my kids try it too, and they loved it. I love the combination of using almond milk, almonds and raspberries, but feel free to use any of your favorite fruits and toppings. Enjoy!</h3>

Freezing is a popular method of storing basil. Place 1 tablespoon basil in an ice cube with water and freeze. When you&#8217;re ready to use it, just take out an ice cube, and use it in your recipe. Another way is to place the leaves in a food processor with a little oil, and then place it in an airtight container. You can freeze basil for up to 6 months if you use a properly sealed container. <h3>I have been an avid runner since I was 16. I love it, and it&#8217;s definitely one of my passions. For years, friends have asked me to come up with recipes for runners. Instead, I thought I would research what are the best foods and write about it. Here are some of my favorites:</h3>
<h3><strong>1. Wild Salmon</strong>-Wild salmon is an excellent source of omega 3 fatty acids which boost heart health and nerve system functioning. Some doctors even say omega-3&#8242;s can help with post-run achy joints.</h3>
<h3><strong>2. Almonds</strong>-High in antioxidants, protein and vitamin E, almonds are a wise choice for a runner&#8217;s snack helping to prevent achy muscles.</h3>
<h3><strong>3. Quinoa</strong>-This complex carbohydrate (pronounced Keen-wah) is a great energy source filled with fiber, B vitamin, zinc and magnesium which are so helpful to runners. One-fourth cup of dry of quinoa has 172 calories, 6 grams of protein, 31 grams of carbohydrate and 3 grams of fiber, and it&#8217;s also gluten-free.</h3>
<h3><strong>4. Kale</strong>-This member of the cabbage family has high levels of vitamin C, vitamin B6, vitamin K, vitamin C and fiber. It is one of the most antioxidant filled vegetables.</h3>
<h3><strong>5. Bananas</strong>-This great pre-workout or post-workout food is a great source of carbohydrates and potassium. That is why you will always find bananas offered at the end of races.</h3>
<h3><strong>6. Eggs</strong>-Eating one egg offers a great source of vitamin K and protein which aid in promoting healthy bones and muscles. I like to purchase the organic omega-3 enhanced eggs.</h3>
<h3><strong>7. Blueberries</strong>-Filled with vitamin C and potassium, these can help the body repair itself after long, hard runs.</h3>
<h3><strong>8. Edamame</strong>-This great snack is filled with protein, fiber, iron, potassium, magnesium, vitamin K and vitamin C. It&#8217;s a great snack option loaded with health benefits.</h3>
<h3><strong>9. Yogurt</strong>-Low-fat yogurt has a good source of carbohydrates and protein, and Greek yogurt has less carbs and even more protein. Both are great sources of calcium which is important for runners to help prevent stress fractures and osteoporosis.</h3>
<h3><strong>10. Oranges</strong>-High in vitamin C, oranges are great for healing and helping absorb iron in the body which can help prevent fatigue and increase energy levels.</h3>

I changed the recipe slightly using Pink Lady apples, more cranberries and walnuts instead of pecans. It was out of this world. Her recipe suggests to top it with milk, honey and cinnamon, but it was great all by itself. I love it because it&#8217;s so easy, filling and has no added sugar. It&#8217;s also bursting with great flavor. My kids loved it too, and I enjoyed serving them a hot healthy breakfast.</h3>
