Whenever I make Pumpkin Bread, it disappears faster than I can make it. My kids asked me to make Pumpkin Bread this weekend, and my daughter found this recipe for One Bowl Pumpkin Bread. Feel free to enhance it with chocolate chips, pecans or raisins. It’s perfect for breakfast, snack or a dessert. This makes a great DIY holiday gift too! Enjoy!
One Bowl Pumpkin Bread
12/3 cups all-purpose flour
11/2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1 cup canned pumpkin
1/2 cup canola oil
2 tablespoons water
1/2 cup walnuts (optional)
1. In a large small bowl, combine the flour, sugar, baking soda, cinnamon, salt, baking powder,and nutemg. In a small bowl, whisk the eggs, pumpkin, oil, and water. Stir into dry ingredients just until moistened. Fold in walnuts, if desired.
2. Pour into a greased 9-inch x 5-inch loaf pan. Bake at 350° for 65 to 70 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before removing to a wire rack. Yield: 1 loaf.

Love that it's one bowl and so easy! I have a vegan 1 bowl no mixer pumpkin bread as well and really for quickbreads, I just can't be bothered with anything more. Lol Pinned!
