Gluten Free Diet idea: Sandwich on a Stick

So many friends are on a a gluten free diet for health or other reasons. This recipe for  Sandwiches on a Stick are the perfect gluten free sandwich recipe idea. These also make great  lunch ideas for the kids or even appetizers for a spring, summer, or fall tailgating party. Get your kids to help choose the ingredients and assist with preparing them. They are so cute, and adults and kids will love them! See some of my other favorite gluten free recipes here.

Gluten Free Sandwich on a Stick

Prep: 20 minutes
Yield: 4 servings
8 (6-inch) skewers
4 oz. deli sliced lemon chicken or smoked turkey breast
1 cup chopped arugula
4 oz. Colby jack cheese, cut into small squares
1 cup grape tomatoes
1/2 cup small dill pickles
3/4 cup ranch dressing or deli mustard (optional)
1. Soak skewers in water for 30 minutes.

2 Thread skewers with chicken (or turkey) arugula, cheese, tomatoes and pickles. Serve with ranch dressing or mustard for dipping.
