Black Russian Grilled Cheese: National Grilled Cheese Month

April 18, 2013

April is National Grilled Cheese Month, so be sure to check out my latest cookbook 150 Best Grilled Cheese Sandwiches. Order your copy today for more recipes like this one for Black Russian Grilled Cheese. This grilled cheese sandwich is as good as it looks, and it makes a perfect  weekday or weekend sandwich recipe. Grilled cheese is America’s comfort, and a hot food trend. I am so fortunate to be a part of the grilled cheese celebration!

Black Russian

Yield: 4 servings
1⁄2 cup stone-ground mustard 125 mL
1 tbsp chopped fresh parsley 15 mL
1 tsp grated lemon zest 5 mL
8 slices pumpernickel bread (1⁄2-inch/1 cm thick slices)
1⁄4 cup olive oil 60 mL
8 ounces Black Forest ham 250 g
1 cup lettuce leaves 250 mL
4 ounces cracked pepper Brie 125 g
1. In a small bowl, combine mustard, parsley and lemon zest.

2. Brush one side of each bread slice with olive oil. Place on a work surface, oiled side down. Spread bread slices equally with mustard mixture. Top 4 slices equally with ham, lettuce and Brie. Cover with remaining bread slices, oiled side up, and press together gently.

3. Place sandwiches on preheated panini grill or in a large skillet over medium heat and cook, turning once if using a skillet, for 3 to 4 minutes or until golden brown and cheese is melted. Serve immediately.
