Bacon, Egg and Cheese Biscuit Recipe

Our weather in Birmingham has been so dreary since the new year with SO many rainy days, so I thought I would share a comfort food recipe.This Grilled Egg, Cheese and Bacon Biscuit recipe is my three kids’ favorite breakfast lately. This recipe is just one of the breakfast recipes in my latest book “150 Best Grilled Cheese Sandwich Recipes”. Bacon Egg and Cheese Biscuit

Prep: 15 minutes
Cook: 15 minutes
Yield: 4 servings
4 large eggs, lightly beaten
1 tablespoon skim milk
1⁄4 teaspoon salt
1⁄4 teaspoon freshly ground black pepper
6 tablespoons butter, divided
4 biscuits, sliced
4 slices bacon, cooked and halved
1⁄4 cup shredded Cheddar cheese
1. In a medium bowl, combine eggs, milk, salt and pepper.

2. In a skillet, melt 1 tablespoon of the butter over medium heat. Add egg mixture and cook, stirring, until scrambled. Set aside egg mixture and wipe skillet clean.

3. Spread remaining butter equally over biscuit tops. Place on a work surface, buttered side down. Top 4 halves equally with scrambled eggs, bacon, cheese and remaining biscuit half. Place biscuits, buttered side down, on preheated panini grill or in a skillet over medium heat and cook, turning once if using a skillet, for 3 to 5 minutes per side or until browned and cheese is melted. Serve immediately.

What a perfect breakfast! :) Oh, and I saw Pure Barre on the side bar and tried it for the first time at Christmas and it was amazingly hard! :) So fun.

This is right up our ally! My boyfriend and I make eggs and bacon almost every morning and it's been ages since I've had a good biscuit! I work at a wine tasting room and we sell a grilled cheese cookbook there...I'll have to check yours out and see if we can add it to our cookbook collection :)
