Oatmeal Chocolate Chip Cookie Recipe
December 11, 2012Who is invited to a Christmas Cookie Swap or is in the baking mood? My daughter, Leigh and I made this Oatmeal Chocolate Chip Cookie Recipe, and we have been craving them ever since. These are the classic Oatmeal Chocolate Cookies, and they make a great holiday food gift or cookies to leave out for Santa. Feel free to use dark chocolate chips and add nuts if you wish.
Oatmeal Chocolate Chip Cookie Recipe

Ingredients
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
1 egg
1 egg white
2 teaspoons vanilla extract
11/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oats
11/2 cups chocolate chips

Preparation
1. Preheat the oven to 325F.
2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats, and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
3. Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

These look so good. I always say, if I am going to indulge in a treat it better be worth it... and I always use oatmeal cookies as an example of what I think would be "worth it." These are going right into my recipe box! Thanks for sharing:)
