Pumpkin-Protein Smoothie: Kid-Friendly

How many smoothies do y’all make a week? I can’t even begin to count over at my house. My kids are always trying new creations, and I am trying to keep up with their creativity. This Pumpkin-Protein Smoothie was a recent favorite. I had some leftover pumpkin, and I thought why not try it with peanut butter? It sounds a little weird at first, but it works. Happy Halloween! Here’s to a great fall 2012!

Pumpkin-Protein Smoothie

Prep: 10 minutes
Yield: 4 servings
Ingredients
2 cups low-fat vanilla yogurt or frozen greek yogurt
1 cup packed pumpkin
1/3 cup creamy peanut butter
2 tablespoons honey
11/2 teaspoon pumpkin pie spice
1 cup cubed or crushed ice
Preparation
1. Place all ingredients in container of a blender. Process until smooth. Pour into 4 classes. Serve immediately.

Although the recipe sounds great and I plan on trying it tomorrow, what actually caught my eye was the napkin(maybe placemat?) your smoothie is sitting on. Can I ask where you found them? I have been looking for something similar for table decor. Thanks in advance. :)

This looks great and in the summer, I probably make nearly as many smoothies as you! You have more kids though - they INHALE them! lol
