Easy Tacos: Weeknight Dinner Idea

Two weeks down, and our school is in full swing. Can you believe it? We are up to our ears in homework, dance, football and soccer, so dinner is always a challenge. These Easy Tacos are an ideal super quick weeknight dinner recipe. Instead of using a store-bought taco mix, use this homemade spice mixture which will have a lot less sodium. You can even make the meat ahead of time to simplify the dinner process. If you are gluten-free or eating Paleo, spoon the meat over the salad or use gluten-free tortillas (that’s what I do). Enjoy and have a great week ahead!

Easy Tacos

Prep: 20 minutes
Cook: 17 minutes
Yield: 4 servings
Ingredients
11/4 pounds ground lean beef or ground turkey
1/2 cup finely chopped onion
2 cloves garlic, minced
1 (8 ounces) can tomato paste
1 to 2 tablespoons chili powder
1 teaspoon ground cumin
1/4 teaspoon kosher salt
1/4 teaspoon chipotle seasoning
1/4 cup salsa
8 hard tacos shells
1 Lettuce, tomato, shredded cheese, nonfat Greek yogurt, salsa (optional)
Preparation
1. In a large skillet cook turkey over medium heat 5 minutes or until browned; drain. Add onion and garlic; cook 2 minutes more. Add tomato paste, 1/3 cup water, chili power, salt and chipotle seasoning. Simmer 5 minutes, stirring often. Add salsa; cook 5 minutes more.

2. Spoon 1/4 cup of the taco filling into each taco shell. Top with lettuce, tomato, cheese, yogurt and salsa, if desired. Serve warm.

great dinner idea and I can't believe your kids started TWO weeks ago already...wow, mine starts on Thursday. Hope everyone is easing back in - but usually it starts off with a bang. No easing in!

A nice, quick taco dinner is always a hit at our house! I make my own spice mix too and keep it on hand for tacos any time.
