10 Irresistible Ice Cream Sandwiches

I can’t believe summer is almost over, and my kids go back to school in one week. We thought we would do something fun this weekend, so we made these Homemade Ice Cream Sandwiches. This recipe came out of my book “400 Best Sandwich Recipes”. They  are so easy that 3 kids have learned to make these on their own.
