Heart Healthy: No Bake Blueberry Bars

What is your favorite no bake recipe? I have been obsessed with “no bake” recipes this summer, especially desserts. These No Bake Blueberry Bars are so easy to make. I saw this Strawberry Oat Bar recipe in a recent Whole Living Magazine, and I had to try them with blueberries. Both the strawberry and blueberry versions are so good! I used almonds instead of macadamia nuts, but any nut would work. Dates and nuts are so healthy for you. Dates are a sweet fruit that grows on palm trees and contain B vitamins, Vitamin C and fiber. They are a good source of energy and low in fat. Almonds are a great protein source, heart healthy and help with cholesterol.

No Bake Blueberry Bars

Prep: 15 minutes
Yield: Serves 8 to 10
Ingredients
11/2 cups pitted dates
1/4 cup raw almonds nuts
2 tablespoons old-fashioned rolled oats
1 Pinch sea salt
3/4 cup blueberries, hulled and thinly sliced
Preparation
1. Pulse dates, nuts, oats, and salt in a food processor until combined.

2. Press the date mixture into the bottom of a 9-by-5-inch loaf pan.

3. Top blueberries on top of date mixture pressing them down to stay. Slice into squares.

No bake bars are always awesome b/c of the ease and LOVE the dates + blueberries in these!
