S’mores Ice Cream Pie

My kids and I have been making a lot of S’mores this summer. I  had the idea of a S’more’s Ice Cream Pie, and I quickly put this recipe together. I used fudge ripple ice cream, but feel free to use any flavor of your favorite ice cream. You could also sprinkle the top with chocolate shavings, but kids were in such a hurry to eat it, I didn’t even have the time. Oh, well, here’s to summer 2012!

Smores Ice Cream Pie

Yield: 10 to servings
Ingredients
1/2 (1.5 quart) container of your favorite ice cream
9 graham cracker sheets
2 regular Hershey chocolate bars, melted
1/2 (10 ounce) package large marshmallows
1/4 cup skim milk
Preparation
1. Lightly coat an 8-inch square cake pan with cooking spray; line pan with plastic wrap, leaving a 6-inch overhang on two sides. Fill bottom with ice cream. Top evenly with graham crackers and cover with chocolate. Place in the freezer for 10 minutes.

2. Meanwhile, place marshmallows in a medium microwave-safe bowl on high heat 40 seconds. Add milk, mixing well. Let cool slightly. Spread marshmallow mixture over chocolate and top top with remaining graham crackers, Wrap in plastic wrap and freeze until from, about 8 hours. Turn upside down onto a serving plate and serve immediately.

Fun pie! I made a batch of gluten-free graham crackers last year which would go perfect with this. My kids thank you for the inspiration :-)

This is PERFECT since practically our whole state is under fire ban in CO. We live high up in the mountains and always enjoy smores yet this summer like many it's been so dry we can't have a campfire. What's the next best thing.... YOUR Smore's Ice Cream Sandwich! Yes I would like some-more please:). Great idea, thank you for your brilliance!
