Quinoa Chicken Fried Rice Recipe
April 25, 2012My oldest son, Alec, has been begging me to make homemade fried rice for a while. I decided to twist the basic recipe and make it with quinoa instead of rice. This Quinoa Chicken Fried Rice recipe is a hit for something new and different for your weeknight table, especially if you’re looking for something gluten-free, healthy and hearty. Feel free to substitute rice for the quinoa if you wish, but I love that quinoa is a gluten-free, nutty grain that is a complete protein which is high in fiber, low in calories and is high in iron, magnesium and calcium.
Quinoa Chicken Fried Rice Recipe
Prep:

25 minutes
Yield:
4 to 6 servings
Ingredients
1 cup quinoa or 2 cups rice
2 tablespoons sesame or canola oil
1 (16 ounce) package frozen baby carrots and green peas, cooked
3 green onions, chopped
2 eggs, scrambled
2 cups chopped cooked chicken
Low sodium soy sauce to taste (gluten-free if needed)

Preparation
1. Cook quinoa according to package directions. Set aside and keep warm.
2. Heat oil in a large sauté pan over high heat. Stir in carrots and peas and onions; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked quinoa and chicken; cook 5 minutes more. Add soy sauce, and toss to coat.

What a great idea, Alison! I have to admit that I am so late to the party with trying quinoa. Two packs in my pantry and still have yet to try it. I think this recipe is just the inspiration I need to give it a go!

For someone that's just finally dipped into the world of quinoa. This really sounds good. I had some California Quinoa from whole foods and it was great.

As someone with Celiac I want everyone to know that replacing the rice with quinoa is NOT what makes it GF. Soy sauce has wheat in it and therefore the source of gluten in most Asian dishes. Using a GF soy sauce will make most fried rice dishes GF. Although this would be a great dish, minus the chicken, for anyone who is a vegetarian.
