No-Bake Date Nut Energy Bars

April 17, 2012

I am always looking for new, healthy snack ideas for the kids, and if I can come up with a no-bake recipe idea, then even better. My two boys love dried dates, so I thought this combination of dates, nuts and flaxseed would make a great healthy snack, dessert or breakfast idea. You’ll love these too. No-Bake Date Energy Bars are not only “no-bake”, they are also gluten-free and perfect for all of my friends following the Paleo Diet. They also make a great pre or post workout snack so enjoy!

This recipe was adapted from “The Dramatic Pancake”.

No-Bake Date Nut Energy Bars

Prep: 15 minutes
Yield: 1 dozen
Ingredients
11/2 cups pitted dates
1/3 cup dark chocolate cocoa powder
1/3 cup ground flaxseed
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup whole unsalted almonds
1/2 cup unsalted pecans halves
1/2 cup dried berry mix
Preparation
1. Purée dates in food processor until almost smooth. Add cocoa powder, flaxseed, cinnamon, and vanilla. Pulse until all ingredients are combined. Add the almonds and pecans and pulse until nuts are finely chopped and incorporated into date mixture. Stir in dried fruit.

2. Spread large sheet of wax paper on work surface. Transfer date mixture to wax paper, and press mixture into 1/2-inch-thick rectangle. Wrap tightly in wax paper, and chill overnight. Unwrap block, and cut into bars. Store in wax paper and refrigerate.
