New Year’s Eve Appetizer: Chicken-Chipotle Dip
December 29, 2011If you’re looking for a super easy appetizer for New Year’s Eve, Super Bowl Party or just any occasion, I have one for you. This Chipotle Chicken Dip is one of my newest favorite lightened up appetizer recipes. Take a shortcut by using a rotisserie chicken and add light cream cheese, nonfat Greek yogurt, green chilies, chipotle seasoning. Serve it with your favorite whole grain crackers, pita chips or fresh vegetables, and you’ll have a crowd favorite.
Lightened Up Chicken-Chile Chipotle Dip

Ingredients
1 rotisserie chicken, chopped
1 (8-ounce) package light cream cheese, softened
1 (6-ounce) container nonfat Greek yogurt
1/2 cup reduced-fat mayonnaise
2 cups shredded Colby cheese, divided
1 (4.5-ounce) can diced green chiles
1/4 teaspoon paprika
1/4 to 1/2 teaspoon ground chipotle seasoning
Whole Grain crackers, pita chips
1 (8-ounce) package light cream cheese, softened
1 (6-ounce) container nonfat Greek yogurt
1/2 cup reduced-fat mayonnaise
2 cups shredded Colby cheese, divided
1 (4.5-ounce) can diced green chiles
1/4 teaspoon paprika
1/4 to 1/2 teaspoon ground chipotle seasoning
Whole Grain crackers, pita chips
Preparation
1. Preheat oven to 350F.
2. Combine chicken, cream cheese, yogurt, mayonnaise, 1 cup of cheese and chiles in a large bowl, mixing well. Spread in a lightly greased 11- x 7-inch baking dish or 2 (1-quart) greased casserole dishes. Top with remaining cheese; sprinkle with paprika and chipotle seasoning. Bake in preheat oven 40 to 45 minutes or until golden brown. Serve with whole grain crackers, pita chips or fresh vegetables.

This reminds me of a Buffalo chicken dip that my kids love that I lightened up - love the flavorings in this chipotle chicken dip. Happy New Year!
