Chocolate-Coconut and Toffee Bars
October 05, 2011Need a great dessert or sweet snack to feed a crowd? A friend of mine passed me a version of a recipe which I tweaked to create these Chocolate-Coconut Toffee Bars. These remind me of a cross between S’mores and Hello Dolly bars, but these are a little less fattening. I used low-fat graham crackers as the base with a toffee layer topped with coconut, pecans and dark chocolate. They are so easy to make, and the kids loved them (especially for a study break snack).

Ingredients
11/4 cups chopped pecans
11/4 cups shredded sweetened coconut
1 cup dark chocolate morsels
Cooking spray
12 low-fat graham crackers
1/2 cup butter
1/3 cup light brown sugar

Preparation
1. Preheat oven to 350F.
2. Spread pecans and coconut on a large baking sheet. Bake until golden about 7 to 10 minutes. Let cool completely; add chocolate, mixing well.
3. Line a 10- x 15-inch rimmed baking sheet with foil. Spray with cooking spray. Break 12 graham crackers in half and fit in pan in a single layer.
4. In a saucepan, whisk together butter and light brown sugar over medium-low heat until smooth. Spread evenly over crackers. Bake until bubbly about 8 to 10 minutes. Sprinkle with pecan topping; press gently. Let cool and serve.

These are almost exactly like a treat I've made for years! From a Denver Junior League cookbook, they call them Larimer Toffee Squares (Larimer Square is a historic block in our city). I've never added the coconut...but I will now! Wish I had one now.

I love, love, love Hello Dolly Squares, but never make them anymore. I would totally make these for football watching!
