Easy Homemade Food Gift: Holiday Cracker Jacks

I love working on homemade holiday food gift recipes this time of year, and my 3 kids love helping me create them too. This creative idea for Homemade Cracker Jacks is a simple recipe that adults and the kids can enjoy. Just pick up a small one dollar item to put in the box as a toy. I will be making this recipe this Tuesday on NBC “Daytime Alabama” as well as two others, and this recipe will also be featured in the December issue of Birmingham Magazine.

Holiday Cracker Jacks

Prep: 10 minutes
Cook: 1 hour, 15 minutes
Yield: 16 servings
Ingredients
11/2 quarts freshly popped popcorn
1 cup pecan halves
1 cup whole almonds
1 cup walnuts
1/2 cup butter
1 cup light brown sugar
1/4 cup honey
1 cup holiday M & M's
Preparation
1. Toss together first 4 ingredients in a large lightly greased jellyroll pan (or line pan with parchment paper).

2. Melt butter in a medium saucepan over low heat. Stir in brown sugar and honey. bring to a boil and boil 5 minutes without stirring. Remove from heat and pour over popcorn, stirring until evenly coated.

3. Bake at 250F for 1 hour, stirring ever 15 minutes. Cool completely and break into pieces. Add M & M's. Store in an airtight container for up to 5 days.

Being a popcorn traditionalist, I've always had a tough time warming up to Cracker Jacks. BUT these look so festive and, really, who doesn't want a big bucket of these during this time of year.

I am planning on using only those big yummy pecans available this time of year (family preference).Hope there is some left for gifting,alhough highly unlikely!
