Low-Fat & High Flavor: Edamame Salsa
November 03, 2010If you’re looking for a quick appetizer or awesome side to go with fish, chicken, turkey or pork, look no further than this Edamame Salsa. Edamame are so fresh, flavorful and low in calories and fat, but they are also high in protein, fiber and a good source of calcium. I love cooking with edamame because my 3 kids love them. Edamame Salasa
Prep:
10 minutes
Yield:
2 cups
Ingredients
11/2 cups frozen shelled edamame beans, thawed
1/2 medium red bell pepper, diced (1/2 cup)
1/4 cup diced purple onion
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/2 medium red bell pepper, diced (1/2 cup)
1/4 cup diced purple onion
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon olive oil
Preparation
1. In a medium bowl, combine edamame beans, red bell pepper, onions, cilantro, 2 tablespoons lime juice and olive oil, mixing well. Use immediately or cover and chill until ready to serve. Serve with tortilla chips, chicken, steak, turkey and pork.
