Fall Favorite: Mixed Green Salad with Pear and Pecans

Since Fall Fest is featuring pears this week, here is my favorite fall salad that I like to make this time of year and on Thanksgiving. It’s so simple to prepare with mixed greens, dried cranberries, sliced pears and toasted pecans. I like to make my own Poppy Seed Dressing with a touch of shallots in it. If you don’t have time to make your own dressing, purchase a bottle poppy seed dressing. Feel free to vary this recipe, using different pear varieties and walnuts instead of pecans. This salad is also wonderful with the addition of goat cheese. It’s so pretty and a fresh taste of fall. Enjoy.

Mixed Greens Salad with Pears and Pecans.

Prep: 15 minutes
1/4 cup granulated sugar
1/2 cup white vinegar
1/2 teaspoon salt
1 teaspoons Dijon mustard
11/2 teaspoon finely chopped shallot
1/2 cup canola oil
1 tablespoon poppy seeds
6 cups mixed greens
2 ripe pears, thinly sliced
1/2 cup pecan halves, toasted
1/3 cup dried cranberries
3 ounces crumbled goat cheese (optional)
1/2 teaspoon freshly ground pepper
1. In a food processor or large bowl, combine sugar, vinegar, salt, mustard and shallots. Gradually add oil in a steady stream. Stir in poppy seeds.

2. Combine mixed greens, pecans and goat cheese, if desired in a large mixing bowl. Sprinkle with pepper and drizzle with dressing right before serving.

The basic salad is a fall favorite of ours, but the poppy seed dressing was AWFUL!!!

Do you mix the pears with the other ingredients in step 2 or do you put them on top of the finished salad?
