Celebrate Cinco De Mayo with Pomegranate Margaritas

May 01, 2009

img_0461

I featured this awesome Pomegranate Recipe when my blog was brand new back in November right before Thanksgiving. Since Cinco De Mayo is around the corner, I thought I would share it one more time. Adding pomegranate juice adds great depth of flavor to this simple beverage. It is perfect to serve this time of year as the weather has warmed up here in the south, and spring is upon us. I used Patron Silver for the tequila, as it’s one of my favorites. Look for me on Sunday at 7:35 a.m central time on Fox 6 News in Birmingham, Alabama

Pomegranate Margarita

Prep: 5 minutes
Yield: 8 servings
Ingredients
1 Lime wedges
1
1 Salt or sugar for the rim
1
1 Ice
1
8 ounces white tequila
1
4 ounces Triple Sec
1
1 cup pomegranate juice
1
2 limes, juiced (optional)
1
1/2 cup club soda
Preparation
1. Pour salt or sugar onto a plate or shallow dish. With a lime wedge rub along the rim of a glass and dip glasses upside down to salt the rim. Fill glasses with ice. In a cocktail shaker with ice place the tequila, triple sec, pomegranate juice, and lime juice. Pour into the salt-rimmed glasses and top off with club soda. Garnish with a lime wedges, if desired.
