Fool-Proof Delicious and Easy Passover Brownies

Every year, my sister, Julie, and her college friend, Toby, have a tradition for baking desserts for Passover. Last year, my daughter and I even helped make sponge cakes, mandel bread, cookies and these Passover brownies. Passover is a holiday about tradition, and this recipe was passed down from Toby’s husbands’ Aunt Marie who made these brownies for years. Toby will never forget when she brought the pan of brownies over. There was always one square missing. Aunt Marie had to make sure they were “just right”. ¬†Feel free to mix the nuts inside the batter as well as sprinkling some on top. This year they made them in muffin cups, and that worked great too!

Classic Passover Brownies

Prep: 10 minutes
Cook: 20 minutes
Yield: 12 to 16 servings
1/2 cup cocoa powder
2 cups sugar
3/4 cup vegetable oil
5 eggs
1 cup cake meal
1/2 teaspoon salt
1 Chopped nuts (optional)
1. Combine first 6 ingredients in a large mixing bowl, stirring well. Place batter in a lightly greased 13-x 9-inch baking pan. Bake at 325F for 20 to 25 minutes. Top with nuts, if desired.
